FAQ

Charcoal is carbon that is left after water and other volatile compounds are burnt off from wood (or any combustible biomass) in a low oxygen environment. This process known as pyrolysis is usually done in silos or specialised charcoal kiln and can take days to complete

In general, five common types of charcoal are in use all over the world today: lump charcoal, charcoal briquettes, hardwood briquettes, binchotan, and coconut shell charcoal. Each has its benefits, and the type of charcoal you will use may vary depending on your cooking situation or the food you are cooking.

Charcoal burns out much faster than briquettes. So next time you go and buy fuel for your outside cooking, buy CHARCOAL to braai meat. If you are going to roast something in a Weber, slow cook something in a potjie or bake a bread in a flat bottomed pot where you need slower controlled heat, then you buy BRIQUETTES

Can you mix lump charcoal with briquettes? Yes… of course you can. Thing is, good lump charcoal burns a bit hotter and faster than briquettes do, so cooking with such a mixture will be a little harder to judge in an open grill. When using a weber, the best method is to follow the snake method. The snake method works by running a long ring of unlit charcoal briquettes around the outside of your weber. By then placing a few lit briquettes at one end of your “snake” you are able to keep a consistent low temperature for a long period of time as the lit beads gradually light the unlit beads.

Lump Charcoal. Briquettes are faster-lighting and burn longer, but while they burn longer, they don’t burn as hot as lump. Briquettes are smokier than lump and have a distinctive flavor that permeates the food, largely from the binders and fillers added. Lump can be difficult to light, but it burns with a clean smoke.

Briquettes are great for producing long-lasting heat, and while they can be used for searing, doing so means missing out on the opportunity to infuse more flavour into your dish. On the other hand, charcoal burns hotter and adds more flavour to your food.

Follow this tip: The grill needs to get good and hot before any food is added. After lighting the grill, cover it with the lid and let the charcoal heat up for at least 15 minutes. You’ll know it’s ready when it looks gray and ashy.

If you keep the lid closed, heat will remain trapped inside your grill. In turn, all that heat will make your charcoal burn faster. But if you open the lid, some of the heat will escape, thereby causing your charcoal to burn slower and for longer. Without a sufficient amount of air, your charcoal will burn out, forcing you to relight it.
